Recipe: Lean turkey and roasted veggie loaf
This healthy lean turkey loaf will hit the spot, I’ve made it last night and its yummo.
this is what you will need:
- 500 gms lean turkey mince
- 1 small carrot
- 2 eggs
- 1 red and 1 green capsicum
- 1 large brown onion
- 200 gms of white mushrooms
- handful of chopped Spanish olives (optional)
Bake your onions and capsicums in the oven or pressure cooker if you have one.
Saute the mushrooms in the pan
Shred the raw carrot on a shredder
In a large bowl: mix the turkey mince, shredded carrot, eggs, roasted capcicums and onions, sauted mushrooms, salt, pepper and add some chopped olives if you like.
Shape the mixture into loafs of whatever size you like, I normally make about 3 out of the contents and place in an oven or pressure cooker for 20 mins, turn over and cook for another 10.
Serve with steamed veggies or salad.
It’s easy, tasty and healthy you can take it to work for lunch.
